Chili vegan and gluten free! 

Make sure to check all ingredients to make sure you are buying gluten free and vegetarian beans! 

Ingredients 

1 can red kidney beans (I only use organics by central market ) 

1can black beans 

1 can pinto beans 

Optional can of white northern beans if you are feeding more than 4 

1 can corn 

1 small can tomato sauce

I small onion chopped 

2 Tbsp fresh minced garlic

1/4 cup chili powder 

Salt and pepper to taste ( I use a lot of salt about 2Tbsp and about 2tsp pepper) 
Add all ingredients onions and garlic first to soften. When onions are clear add the rest of the ingredients and simmer 2 hours. It will be done to eat after it gets hot by the longer you cook chili the better it taste! 

Vegan gluten free pasta! 

Ingredients 

1 box gluten free pasta (any kind) 

Half cup sliced mushrooms

Half cup zucchini and yellow squash

1 small diced onion

2 Tbsp Fresh minced garlic

1Tbsp or more Italian seasoning 

2 Tbsp Veggie oil 

1 jar sauce (I use Classico sweet basil) 

Sauté veggies in pan with with oil until onions are transparent and add sauce. Turn down to simmer while noodles cook in separate pot. When noodles are done drain and add sauce! 

Vegan gluten free tacos

Gluten free and vegan tacos! Corn shell stuffed with retried beans seasoned potatoes spinach and tomatoes!  

This recipe will feed approximately 4 people

Ingredients 

Corn tortillas 

Veggie oil for frying

2-3 large gold potatoes

2 cups spinach 

One can vegetarian refried beans (I used organics by central market) 

One large diced tomatoe 

1 Tbsp garlic powder or fresh minced

1 Tbsp onion powder or fresh minced

3Tbsp chili powder

Salt and pepper to taste 
In one large saucepan add chopped potatoes 2Tbsp veggie oil and all spiced. Put a lid on it and cook on med heat stirring occasionally. 

In smaller saucepan add enough oil to coat the bottom of the pan and heat on med until oil is hot. Add corn tortilla and wait for it to bubble around the sides, flip the tortilla and fold in half. Cool about 1-2 minutes per side to desired crunch. Proceed with the rest of your tortillas. About 10. 

In med pot add refried beans and heat. 

When tortillas and potatoes are done add spinach to potatoes and sauté until soft. Assemble tacos. Tomatoes go on top.
